Top 6 DIY Summer Cocktails

With the end of summer just around the corner Lucy Egan checks out some delicious cocktails to try at home.
Covid-19 has really put a spanner in the works in a big way in the last two years. January two years ago was when it first started appearing on the news, smack bang in the middle of summer break, just before Uni went back. I remember where I was when I started hearing about it and thinking about whether it would ever hit Australian shores.
Flash forward two years and it has impacted everyone’s lives in different ways, particularly with the recent Omicron wave. Omicron changed the landscape of Christmas and New Year; suddenly Covid-19 was more widespread than ever before, with significant ripple effects and social repercussions. Plans changed, clubs shut, music events were cancelled, singing and dancing limitations were re-introduced.
Well, I am here to tell you that you do not have to sacrifice the summer experience of a nice cocktail or mocktail (or cold bevvy if that’s more your thing). It’s time to get your Tom Cruise on and have a shot at some iconic drinks! Or, why not get your mates together and have a cocktail competition?
All of the drinks below can also be adjusted to mocktails and non-alcoholic versions. Drink responsibly and enjoy. Here’s some suggestions to get you started.
1. Pina Colada
A sweet tropical blend of coconut cream (or cream with coconut syrup), pineapple juice and white rum (Malibu and Bacardi are favourites) with ice. Omit rum for a non-alcoholic version.
2. Daquiri
The daquiri is an easy yet delicious combination of rum, simple syrup and a citrus juice. The possibilities for extra flavouring are endless with an array of summer fruits such as strawberries and mangoes. They can also be made with frozen ingredients from an extra cool touch!
3. Mojito
Another staple is the mojito which is a refreshing and sophisticated mix of mint, lime juice, simple syrup and white rum, with soda water, to taste. The alcohol can also be removed for a mocktail for the designated drivers amongst us!
4. Margarita
The Margherita is a classic cocktail for the savoury-lovers amongst us! A shot of Cointreau and tequila is shaken with lime juice and poured over ice, typically served in a glass with a salted rim. The opportunity was shaking things up is also available here with variations such as watermelon margaritas available.
5. Punch
The alcoholic (or non-alcoholic punch) can be where you really get creative! Fill a big vessel with a mixer such as soda water, juice or soft drink, add a liqueur (or wine) of your choice and decorate with fruit or lolly garnishes.
6. Spritzes
Spritzes have made a big comeback recently with their light taste and ability to hold many flavours a popular feature. Aperol spritzes are traditional but do not be put off by the bitter taste! Spritzes comprise of a dry wine like Prosecco (but can be Moscato etc), a bitter and soda water. They are a perfect summer drink.
